  • Remove the pudding from the heat and cool it down by the stirring it occasionally.

Ingredients:

Baked sweet potatoes

  • 2 medium sweet potatoes

Miso black rice

  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 clove of garlic, chopped
  • 1/2 red bell pepper, finely diced
  • 1 cup black rice
  • 2 and 1/2 cups water
  • 1/8 tsp salt
  • 1 tbsp tomato paste
  • 1 tbsp white miso (shiro miso)
  • 1 tsp nutritional yeast

Greens

  • About 2 cups packed leafy greens (spinach, kale, etc)
  • Sea salt, pepper

Miso sauce

  • 3 tbsp white miso
  • 2 tsp maple syrup
  • 1 tbsp almond butter
  • 1 tbsp rice vinegar (or lemon juice)
  • 1/8 tsp garlic powder
  • 1 tsp sesame oil (optional but adds flavor)

Procedure:

Baked sweet potatoes

  1. Preheat oven to 400°F.
  2. Wash and brush the sweet potatoes, pat them dry with a kitchen towel. Prick each potato a few times with a knife and wrap each one loosely with foil.
  3. Place on a baking sheet and bake for about 50 minutes, or until the sweet potatoes are soft.

Miso black rice

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the onions and garlic and cook for about 8 minutes, or until the onions are soft and translucent.
  3. Add the red bell pepper and cook for another 5 minutes, stirring regularly to make sure the onions don’t burn or stick to the bottom of the saucepan.
  4. Rinse the black rice and add it with the water, salt and tomato paste to the saucepan. Bring to a boil, lower the heat and let simmer 45-50 minutes, or until the rice is soft and almost no water remains.
  5. Stir in the white miso and nutritional yeast.
  6. Divide into 3 bowls and top with the baked sweet potatoes and greens. Drizzle the miso sauce on the sweet potatoes and serve hot.

Greens

  1. Wash the leafy greens. Heat one tablespoon of olive oil in a large skillet, sautée the greens for about 5 minutes (I used spinach, it might take longer if using kale or chard). Season with salt and pepper.

Miso sauce

  1. Combine all the ingredients in a small bowl and add water, one tablespoon at a time, until you get the desired consistency.

Procedure:

Rice

  1. In a medium saucepan, bring the water to a boil. Add the rice and salt. Cover, reduce the heat to low-medium and simmer for about 30 minutes until the rice is cooked. Drain the rice and set aside.

Broccoli and carrots

  1. Bring a large pot of water to a boil.
  2. Wash the broccoli thoroughly and drain it. Cut it into small florets.
  3. Wash and peel the carrot and cut it into matchsticks.
  4. Place the broccoli florets and carrot matchsticks into the water, cover the pot and cook for about 10 minutes until slightly soft.

Mushrooms

  1. Wash the mushrooms and cut them into slices.
  2. Heat a skillet over medium heat and saute the mushrooms for 5 minutes until mushrooms are browned. Deglaze the skillet with 1 tablespoon soy sauce. Set aside.

Crunchy almond butter sriracha dressing

  1. Mix all ingredients together in a bowl until creamy and well combined.

To assemble

  1. Top the black rice with avocado slices or cubes, mushrooms, carrots, preserved lemon and broccoli.
  2. Add the green onions and drizzle with the almond butter sauce.
  3. You can also mix together all the ingredients in a large bowl.

Ingredients:

  • 1 large egg (For vegan option – substitute 3 Tbsp warm water + 1 Tbsp ground flax seeds for the egg. Whisk together water and flax seed in a small bowl and dip cauliflower florets in mixture, followed by dipping in panko crumbs.)
  • 1 cup panko crumbs
  • 1 small head of cauliflower, cut into small (bite sized) florets
  • 2 Tbsp cornstarch
  • 6 Tbsp orange juice (approx. juice of 1½ oranges)
  • ¼ cup honey (for Vegan option substitute 2 Tbsp. agave)
  • 2 Tbsp soy sauce, low-sodium
  • 2 Tbsp rice vinegar
  • 2 tsp ketchup
  • ½ tsp sriracha (more or less to taste)
  • ¼ tsp minced ginger
  • 1 clove garlic, minced
  • 3 cups forbidden (aka black) rice, cooked
  • 2 green onions, sliced
  • 1 tsp sesame seeds

Procedure:

For the cauliflower

  1. Preheat oven to 400F. Line a baking sheet with parchment paper , set aside.
  2. Set out two small bowls. In the first bowl, whisk egg. In the second bowl, add panko crumbs. Dip each bite sized cauliflower floret in egg and then dip in panko crumbs, using your fingers to gently press coating onto cauliflower. Set cauliflower on baking sheet and repeat until all cauliflower is coated. See notes below for vegan preparation.
  3. Bake until cauliflower is golden brown and crunchy. (approx 15-20 min.)

For the sauce

  1. Make while the cauliflower is cooking. In a small bowl whisk together corn starch plus 1 Tbsp water, set aside. In a small sauce pan mix together orange juice, honey, soy sauce, rice vinegar, ketchup, sriracha, ginger and garlic. Bring sauce to a low boil, stirring constantly. Stir in cornstarch mixture and bring to a boil again. Continue stirring until sauce has thickened. (approx 1-2 min.)
  2. Warm up cooked rice if necessary, top with cauliflower and drizzle with sauce. Sprinkle with green onion slices and sesame seeds.

This is a healthy vegetarian version of Panda Express Orange Chicken. Total time: 35 minutes. Serves: 4 people.
